Fruit salad is a refreshing way to cool down in hot weather. It is also a healthier alternative to sweets. You can keep it in your refrigerator to portion out for work or for a snack, or you can make it for a picnic or backyard barbecue. 1 Super Strawberry Salsa

Directions:

Stir together ingredients in large bowl.

Directions:

If using vodka, put fruit in bowl with vodka until completely covered. Cover the bowl with foil and refrigerate a minimum of 2 hours.

Using vodka or not, once the fruit is ready, using toothpicks, skewer a piece of watermelon, cantaloupe and honeydew onto each toothpick.

  • 2 oz. fresh goat cheese

  • Salt to taste

Directions:

Cut the flesh of the melon into 1/2-inch chunks. Place them on a large plate.

Drizzle the lime juice and olive oil on top.

Sprinkle with salt, then add goat cheese and mint leaves. Serve.

4 Minty Watermelon Salad

It is summery and colorful. Fleshy, juicy watermelon gets dressed up with a lime and mint dressing. Unique yet simple, it will impress guests or jazz up your dinner routine.

Ingredients:

  • 8 to 10 cups cubed seedless watermelon
  • ¼ cup fresh lime juice

  • ½ cup crumbled feta

Directions:

  • 6 cup bite-sized pieces fruit (blueberries, raspberries, pineapple, oranges, and bananas, or any other fruit you desire)

Directions:

Mix fresh lime juice, honey, and ginger in large bowl.

Add fruit to bowl. Toss to combine. If you are including bananas, you should serve this immediately to prevent them from turning brown.
